"Cette nouvelle méthode consiste à utiliser des rayons X, à des concentration minimes avec la même procédé que celui utilisant les rayons gamma ou les électrons accélérés. Le problème de ces méthodes est qu'elles altèrent la qualité des aliments car elles dénaturent fortement les cellules ; elles sont donc peu recommandées pour les aliments frais, particulièrement fragiles tels que la salade, les épinards. Cette nouvelle technique est particulièrement efficace pour éliminer les salmonelles et E. Coli O157:H7. Elle vient d'être approuvée par la FDA et représente un véritable espoir pour l'industrie agroalimentaire.

D'après le Global Industry Analysts Inc, le marché mondial de la sécurité alimentaire par irradiation serait estimé à 2,3 milliards de dollars d'ici 2012."
